The Long Red Pepper from Kampot is a long pepper that is harvested when the berries are mature and red. The structure of its fragrance is quite different from that of black pepper and its content of piperine is significantly higher than that of black pepper. It is used whole, broken in 2 or 3 parts, crushed with mortar, ground in a grinder or grated with a nutmeg grater (grind or grate just before use). Both can be added at the beginning or in the middle of cooking in sauces and dishes over low heat, or at the end of these.
Kampot Pepper is grown naturally following the essential principles of organic agriculture in soil building and conservation, pest management, and heritage-species preservation. Regarded as the King of Peppers due to its complex flavours and pungent aroma.
