Amazon Yellow Chili is related to Tabasco chilli and harvested before full ripeness, delivering fruity notes, subtle acidity and pungent taste. A versatile chilli which can be used in many dishes.
Initially, a green pepper, before maturing and turning to the characteristic red color of the Tabasco chile, is harvested when it is yellow. It dries delicately to keep its organoleptic properties unchanged.
How to use the Amazon yellow chili? We can put it whole, cut it in half, grind it with a grinder, rehydrate it, … Important note: the longer it cooks, the more hot it will be. Usually used in Mexican cuisine dishes, such as Chile con carne, it is also used to perfume spicy oils, in the preparation of sauces and moles, in soups and potages, vegetables, meats, fish, eggs … Capsaicin (element that makes the peppers are hot) is found concentrated above all in the pepitas of the chili. We have to take this characteristic into account when we apply this chili and any other to our dishes.
